What is the difference between these 2two dB tables?

I can see for the data, the sales_order_gridsales_order_grid appears to be a subset of sales_ordersales_order. Is this true? What is the processpurpose of havehaving duplicate tables (I assume it is to prevent lock ups).

If I have a custom module andby which I want to add a field to an order, which table do I need to add the field to? And how do I ensure the data is consistent?
