You can achieve it by below query. You have to update sequence table for product

ALTER TABLE catalog_product_entity AUTO_INCREMENT = 1;-

ALTER TABLE sequence_product AUTO_INCREMENT = 1;

ALTER TABLE catalog_product_entity AUTO_INCREMENT = 1;

ALTER TABLE sequence_product AUTO_INCREMENT = 1;

First query will reset row id in catalog_product_entitycatalog_product_entity table Second query will reset entity_identity_id in sequence_productsequence_product table which is nothing but product id.

It will work.
