I worked out Magento have also specified the template in the Magento\Checkout\Block\Checkout\AttributeMerger class... ` 'config' => [ 'customScope' => $dataScopePrefix, 'template' => 'ui/form/field', 'elementTmpl' => 'ui/form/element/input' ],` Which isn't helpful :-(
