I need to perform a operation when a product is deleted from admin. So I have created a observer using below code which is working fine.

        $_product = $observer->getProduct(); 

Here I am getting only last selected product even though when I selected multiple products using checkbox. I want all the selected products Id or sku.

You need to update your observer function's code :

public function execute(\Magento\Framework\Event\Observer $observer)
        $_product = $observer->getEvent()->getProduct();
        $_sku = $_product->getSku();
        $writer = new \Zend\Log\Writer\Stream(BP . '/var/log/Rohan.log');
        $logger = new \Zend\Log\Logger();
        return $this;

Clean cache and check it.
