after increasing max_execution_time max_input_time and memory_limit to the recommended values, and disabling xdebug (or at least increasing xdebug.max_nesting_level) doc here, the installation was still stuck,

then I tried updating my env.php file with this cache section :

'cache' => [
    'frontend' => [
        'default' => [
            'backend' => 'Cm_Cache_Backend_Redis',
            'backend_options' => [
                'server' => '127.0.0.1',
                'database' => '0',
                'port' => '6379'
            ],
            'id_prefix' => 'f19_'
        ],
        'page_cache' => [
            'backend' => 'Cm_Cache_Backend_Redis',
            'backend_options' => [
                'server' => '127.0.0.1',
                'port' => '6379',
                'database' => '1',
                'compress_data' => '0'
            ],
            'id_prefix' => 'f19_'
        ]
    ]
],

I'm still trying to know why it worked ! Hope it helps
