Naigate to Stores -> Configuration -> Catalog -> Catalog -> Expand Search Engine Optimization section

Enable or Disable Canaonical link for categories & products

Use Canonical Link Meta Tag For Categories -> Yes/No

Use Canonical Link Meta Tag For Products -> Yes/No
