In Magento 2.2.6 you can take advantage of Multi-threading for the indexers as stated in release notes here:

This states that I need to add a MAGE_INDEXER_THREADS_COUNT variable to env.php. I'm just not sure where to add the variable properly and would like an example of this variable within the env.php file?

You can try adding like 'MAGE_INDEXER_THREADS_COUNT'=>3 then the env.php will look something like following

Works if you insert below 'MAGE_MODE' with:
